In the kitchens of restaurants and other commercial establishments, there are numerous regulations that must be adhered to in order to operate hygienically, safely and legally. Regular hood cleaning keeps the kitchen exhaust system clean, removing grease and debris from the vent hood, exhaust fan, baffle filters and the entire ductwork, preventing fires. How Dirty Kitchen Hoods Affect Indoor Air Quality
Before starting the cleaning process, technicians make sure to turn off all of the electricity in the kitchen. They then remove the fan, motor and other parts of the hood exhaust system to gain access for cleaning. Protective fire-resistant tarps and plastic wraps are then placed over the adjacent appliances, cabinets, walls, and floors in order to avoid water damage and prevent contamination of other areas by chemical sprays. In addition, a funnel is put on the vent hood to help guide grease and water from the pressure washer into a designated disposal container so that it doesn’t run back into other equipment.
Next, a chemical solution is applied to break down the grease and other contaminants that have built up on surfaces inside the hood, vents, fans, filters and ductwork. This solution is typically a caustic detergent and is sprayed on surfaces using high-pressure power washing equipment, at around 1,500-2,000 p.s.i. After the chemicals have had time to work, technicians will scrape any remaining flammable build-up from the surfaces inside of the hood.
